Fruit and Brie Grilled Cheese

Grilled cheese is a favourite in my home (in most, I think). It’s quick, easy and equally delicious. The ultimate comfort food. Looking for a change or to add some sweet to your savoury? Why not try this grown-up version of a grilled cheese?

Fruit and Brie Grilled Cheese

A Sweet and Savoury version of the ultimate comfort food

Ingredients

  • 4 slices sour dough bread, cut to desired thickness
  • 4 tbsp butter salted
  • 7 ounces brie cheese sliced thin
  • 1 cup fruit preserves, fruit butter or jam raw berries are a great substitiute

Instructions

  • remove rind from brie and slice thin (becasue it is soft, you can manipulate it with your fingers to desired thickness)
  • spread 1 tbsp butter on one side of each slice of bread
  • spread preserves on unbuttered side of two pieces of bread, place brie on the other two (unbuttered side)
  • sandwich together and fry in pan until cheese melts, and bread is golden brown
  • Cut in half and enjoy!

Notes

Any fruit preserve will work, but I really love blackberry jam, whole raspberries or huckleberries fr this recipe. Apple and cranberry is especially delicious too!
