Week 67 Recipe
Persian Love Cake
Having married into a family that originates close to the Middle Eastern area of the world, I have found a love for the food of the region too.
According to legend, a Persian woman was madly in love with a prince. So, for him to succumb to her charms and fall in love with her, she decided to bewitch him by concocting a love potion in the form of a magic cake. This is how the recipe for Persian love cake was born.

This Cake is rich, moist and nutty (yes, we’re still talking about Cake). Infused with Rose water and topped with a lemon icing, this cake is sweet, savoury and all around delicious.
Persian Love Cake
Equipment
- stand mixer
- round baking pan rectangular will work fine, but may require a longer cooking time
- parchment paper optional
Ingredients
Cake Ingrdients
- 2/3 cup butter unsalted
- 3/4 cup sugar granulated
- 2 large eggs room temperature
- 1/2 cup plain yogurt (greek) or sour cream
- 1 tbsp rose water can be found in baking section or natural foods store
- zest of 1 lemon
- 1 cup all-purpose flour
- 2 cups almond flour or almond meal
- 2 tsp cardamom ground
- 1/4 tsp salt
Icing Ingredients
- 1 1/4 cup confectioners' sugar
- 1 tbsp lemon juice fresh
- 1 tbsp water
- 1-2 tbsp pistachios chopped (can use almond slivers)
- rose petals optional (but 100% edible and quite delicious, plus it looks nice)
Instructions
Cake Instructions
- Preheat oven to 350 F (180 C). pan with Parchment paper (or spray with oil)
- In mixer, beat butter and sugar until fluffy (2 minutes). Add eggs, one at a time until well mixed.
- Add yogurt, rose water and lemon zest and beat until blended.
- Turn mixer to low, add flour, almond flour, cardamom and salt. Beat until just combined- Batter will be very thick!
- Transfer batter to pan. Spread out and smoothen.
- Bake for 50- 60 minutes. Top of cake should be golden brown, and center quite level. Toothpick testing is recommended.
- Chill cake in pan for 15 minutes, then remove and cool completely until icing.
Icing Instructions
- Mix confectioners sugar, lemon juice and ewater together until mixed. Icign shoukd run easily, but coat back of spoon. Add more lemon or sugar as needed to acheive desired consistency.
- Drizzle icing over cooled Love Cake, and top with pistachios and rose petals as desired.Enjoy!
