Mmm Makers

Since it’s the last week in April and this year April also arries five Fridays, I thought I would do a round up of the current Mmm Makers, from January until now.

In January, we highlighted MrsK– Creater of Life fo a Kinky Wife.

February was dedicated to Marie Rebel of Rebels notes, creator of Wicked Wednesday and co-host of the Blogable Fiction Marathon.

March belonged to May More of If Sex Matters. May is a published writer, owns and curates Tantalising Tales on Medium and also co-hosts the Blogable Fiction Marathon.

and Last but not least, for the Month of April, we highlighted Posy Churchgate of Pillow Talk. Writer on Medium and Editor of Tantalising Tales, Posy is also a judge for this years Blogable Fiction Marathon. Be sure to read Posy’s published work in the anthology Breaking Limits- a must read for bondage enthusiasts everywhere.

Next week we’ll have a brand new blogger in the spotlight! A lover of kink and with a penchant for making the ordinary extraordinary, she’s sure to make you say Mmm. But you’ll have to come back next week to see who this Mmm Makers is!

Week 70 Recipe

Chicken Parmesan (Parmigiana)

Chicken Parmesan (Parmigiana)

crispy breaded chicken in a tangy tomato sauce, smothered in mozza and parmesan cheese. Hello comfort food!

Equipment

  • 1 cast iron or non stick skillet able to be transferred to oven

Ingredients

Breaded Chicken

  • 2-3 chicken breast, boneless/skinless sliced in half lengthwise
  • 2 tsp salt divided
  • 2 cups panko breadcrumbs
  • 1/2 cup parmesan cheese fresh, grated
  • 1 tbsp garlic powder
  • 2 eggs beaten
  • 1/3 cup vegetable oil for frying

Sauce

  • 1 cup onion finely chopped
  • 2 tbsp garlic minced
  • 2 cups tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1/4 cup parsely fresh, chopped
  • 1/2 tsp salt

Topping

  • 5 slices mozzarella cheese higher moisture content the better
  • 1/4 cup parmesan cheese grated
  • 1 tsbp parsley fresh, chopped

Instructions

Chicken Prep

  • Preheat oven to 425F (230C)
  • Slice chicken breasts all the way in half, place on cutting board and cover with plastic wrap. Flatten each breast half until 1/2 inch (1.25 cm) thick
  • Pat each breast dry with paper towel and season with 1 tsp of divided salt. Set aside and start batter.
  • In a shallow plate. combine breadcrumbs, parmesan cheese, garlic powder and remaining salt. Set aside. Add beaten egg to separate dish.
  • Dip both sides of each breast in egg, then breadcrumb mixture to coat evenly.
  • Heat oil in skillet over medium high heat. Pan fry chicken breasts for 4-5 minutes before flipping and frying for opposite side. Set aside on plate.

Sauce

  • Remove all but 2 tbsp of hot oil from skillet. Add onion and sauté until transparent. Add garlic and sauté until fragrant.
  • Add tomato sauce, paste, Italian seasoning, parsley and salt and combine well. Bring to a simmer and let bubble for 5 minutes.
  • Remove form heat and set aside.

Assembly

  • Place breasts in pan, one at a time, spooning excess sauce over the top of each, coating thoroughly.
  • Cover each breast with a clice of mozzarella and 1 tbsp parmesan cheese. Sprinkle a touch of parsely on top.
  • Bake for 15-20 minutes, or until cheese is melted and a golden brown.
  • Serve with pasta, a salad or as a sandwich.
