Ruthless People– JJ. McAvoy

Week 72 Recipe
Denver Chocolate Pudding (Cake)
A chocolatey, ooey-gooey desert perfect for when you’re short on time or need something to satiate your sweet tooth. Based on Hot fudge pudding recipes from the UK, this version uses cold coffee for an extra pick-me-up!
Denver Chocolate Pudding
Equipment
- 1 9 x 9 inch (23 x23 cm) pan
- 1 whisk
- 1 rubber spatula
- 1 small microwaveable bowl
Ingredients
Cake Layer
- 1 cup flour all purpose
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/8 tsp salt
- 1/2 cup milk any preference
- 6 tbsp Dutch processed cocoa any will work, but Dutch processed cocoa is richer and gives a better flavour
Topping Layer
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 tsp cocoa
- 2 tsp butter melted
Pudding layer
- 1 cup **cold coffee use decaf for a caffeine free version
Instructions
- Preheat oven to 350F /180C
Cake Layer
- Using whisk, mix flour, sugar, baking powder, cocoa and salt together in bottom of greased baking pan. Add milk and mix until thick dough is formed. Spread out evenly.
Topping
- Melt butter.
- Sprinkle brown sugar on top of cake layer, followed by granulated sugar and cocoa, until evenly coated. Pour melted butter over top of sugars.
Pudding
- Pour cold coffee over top both layers, soaking entirely.
- Bake in oven for 45 minutes. Cake will be bubbling when done, and pudding will seem runny. It will thicken upon standing.
- Serve with iced cream, clotted cream or with a dusting of powdered sugar.Enjoy!
