Easy Peasy Vanilla Cake

This recipe was originally named Depression Cake, but I think that is rather, well… depressing. It does come from the Great Depression though, a time when eggs, milk and butter were scarce. This simple recipe ensured it was possible to celebrate together at special occasions, without requiring more than the items in your pantry. Something, I think we could all use now.

In modern days, many use a buttercream icing for this moist cake, and I’ll admit, I do too. But it is just as wonderful with a glaze or powdered sugar dusting instead-keeping it vegan, and pantry friendly.

Easy Peasy Vanilla Cake

A moist a delicious cake, made with nothing but what's found in the pantry and a single bowl. Vegan and easily made gluten free, you can enjoy a sweet treat in just 30 minutes!

Equipment

  • 1 bowl
  • 1 spatula
  • 1 baking pan square or round

Ingredients

  • 1 1/2 cups all-purpose flour use gluten free for a gluten free option
  • 1 cup sugar any sugar will work, white, brown (molasses will darken batter), substitutes (agave, stevia, etc.)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp white vinegar
  • 5 tbsp oil whatever you have on hand
  • 1 1/2 tsp vanilla can substitute with maple syrup, honey, almond or vanilla sugar.
  • 1 cup water

Instructions

  • Preheat oven to 350F 180C. Prepare pan with parchment paper or grease and sprinkle with small amount of flour.
  • Place flour in bowl and add salt and baking soda, mixing together.
  • Create 3 wells in flour mixture. in one place oil, in the second place vanilla (or substitute), and in the third place vinegar.
  • Pour water on top and mix together, until well combined.
  • Transfer to baking pan, and bake on center rack for 25 minute, or until tester comes out clean.
  • Let cool, and decorate as desired.
  • Slice into equal servings (size is up to you!).
  • Enjoy!

Notes

easily make this a chocolate cake by adding 3 tbsp cocoa.
Great with berries and a touch of cream!
