Welcome to Week 90 of Mmm Mondays, where we turn Monday woes into Monday whoas!

It’s rather gloomy here today, and perfect for some baking, a good book and perhaps a cuddle. But dancing in the rain under an umbrella with someone you love sounds pretty yummy too!

Last Week’s Links

Last week had 4 link ups. While low in numbers, all were wonderful – as always.

Marie submitted 2 fabulously written stories. The first was: Therapy Needed, Camping it is. This is a dark tale that reminds me to be aware when in the woods.

The second was: Voice of Victory. I’ve mentioned my love of a happy ending, and it doesn’t get much happier than this.

Then Charmer certainly charmed us with Not always the Cleavage.

And then we saw Liz’s Russian Bride get some unexpected news. Will Ana race back to Russia? Or can she build a new life in England?

This book was in my B&B guest room at the wedding I last attended. I was too busy to complete it, but the gracious hosts allowed me to take it with me (I left another in return).

The Language of flowers is based on the Victorian Language of flowers, where flowers were used to express meaning. Each has it’s significance, but for Victoria Jones, flowers don’t have such a cheery meaning. Newly emancipated form the Foster care system and unable to connect with those around her, but connecting with something deeper than she knows, Victoria finds she has a penchant for helping others, and her knowledge of flowers are the way to do it.

Warning, once you open this book, you won’t be able to stop. This story is surprisingly unexpected, and carries you through every page.


Week 90 recipe

Chai Spiced Cheesecake Muffins

I’m not really a pumpkin spice kind of girl, but I love a good Chai. These muffins are so good! I won’t even tell you. Just go try them!

Chai Cheesecake Muffins

Moist muffins spiced with chai, stuffed with a cheese cake center

Equipment

  • 1-2 muffin tin prepared with baking cups or greased

Ingredients

Muffin Batter

  • 1 3/4 cups all purpose flour
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups applesauce
  • 1 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup vegetable oil

Cheesecake Filling

  • 8 oz. cream cheese 1 cup/1 pkg.- room temperature
  • 1/4 cup granulated sugar
  • 1 tsp vanilla

Instructions

  • Preheat oven to 375F / 190C

Muffins

  • Mix dry ingredients together, mixing well.
  • Mix wet ingredients together until well combined.
  • Incorporate dry mixture into wet mixture using about 1 cup of mix at a time, until all the dry is well combined into the wet ingredients. Batter should be thick, but smooth.

Filling

  • In bowl, mix ingredients together with a fork, until smooth.

Assembly

  • Grease muffin tins. Scoop approx. 1/4 cup of batter into each prepared cup.
  • Add a teaspoon sized scoop of filling to each cup, and swirl filling to into the batter.
  • Bake for 18 minutes. Muffins will be light and springy, with browned edges.
  • Cool 5 minutes before serving.
  • Enjoy!

Notes

For those who do like pumpkin spice, replace 1/2 the applesauce with pureed pumpkin (but don’t omit all of it, as the applesauce is wat makes these so moist)
