Welcome to Week 36 of Mmm Mondays, where we turn Monday woes into Monday whoas!

Last week had 15 yummy posts with a kink declared, a craving shared, and a bottom bared. There was also some Spanish flair, a surprise hidden behind a zipper, and love of the outdoors. You can see all those Mmm’s and more here.

Mmm Mondays opens each week at Noon MDT (UTC-7) and closes the following Tuesday at 6 pm. Over those four days, you can add anything that makes you say Mmm, whether it melts in your mouth, turns your cheeks red, or keeps one hand busy. Of course, image only posts are certainly welcome.

Week 36 Recipe

Sassy Apple Taquitos

Ingredients
  • 1 pkg medium tortillas (flour or corn, usually come with 10)
  • 2 apples (any type, but I love golden delicious or ambrosia)
  • 4 tbsp butter (can be substitutes with ghee)
  • 2 tbsp brown sugar (or raw)
  • 1/3 cups white sugar (berry or a sugar free alternative works well too)
  • 2 1/2 tsp cinnamon
  • 1/2 pkg cream cheese (4 oz, or 1/2 cup)
  • 1/4 caramel sauce (or syrup, or chews melted down) plus some for drizzling
Directions
  • Preheat oven to 400F (205 C)
  • Make cream cheese filling by combining cream cheese, caramel, until smooth, leave at room temperature
  • In sauce pan combine 2 tbsp butter, brown sugar and 1/2 tsp cinnamon. Cook until apples are soft, then remove from heat.
  • scoop 1 tsp of cream cheese mixture into each tortilla, and top with 1 spoonful of apple mixture. Wrap each tightly into a roll-up.
  • Combine white sugar and remaining cinnamon on a large shallow plate. Coat each roll-up with melted butter, then roll in the cinnamon and sugar mixture.
  • place side by side in baking pan, and bake until browned- approximately 15 minutes.
  • Drizzle with caramel sauce and enjoy!
