Ginger Glazed Carrots

- 1 1/2 lbs carrots peeled and trimmed (3/4 kg)
- olive oil
- salt
- cracked black pepper fresh
- 2 oranges zested and juiced (divided)
- 2 cloves garlic smashed
- 1 tbsp ground/minced ginger fresh
- 1/2 cup ginger ale / ginger beer
- 1/4 cup hazelnuts toasted
- 1/4 cup parsley chopped/divided
Preheat oven to 400 F (205 C)
In medium bowl, toss prepped carrots with olive oil, and season with salt and pepper
Zest and juice orange (savign half of each for later), mince garlic and ginger (keeping half of ginger for later) and mix with carrots to coat
Heat oven safe pan over medium heat, add carrots and cook until starting to brown.
Add ginger ale, and mix to gather all the spices and juice together.
transfer carrots to oven and bake for 25-30 minutes until tender.
While cooking, mix remaining juice, zest, and ginger together. Add hazelnuts and parsely.
Sprinkle over carrots before serving.Enjoy!
