Thumbprint Cookies

Equipment

  • 1 mixer/beater
  • 1 large bowl
  • 1 medium bowl
  • 1 Rolling Pin
  • 1 large or 2 small baking pans

Ingredients

  • 1 cup butter softened
  • 6 oz Cream Cheese 1 pkg approx.
  • 2 cups flour all-purpose
  • 2 tbsp sugar granulated
  • 2 tsp baking powder
  • pinch salt
  • 4 tbsp jam any as desired
  • powdered sugar optional

Instructions

  • Preheat oven to 350F/180C
  • In large bowl, beat cream cheese and butter together until fluffy.
  • In medium bowl, whisk flour and baking soda together. Add salt and sugar.
  • Mix dry ingredients with wet ingredients, and mix until well blended.
  • Roll dough onto flour surface to 1/4 inch or 6 mm thickness an cutout into rounds (use a glass or a cookie cutter).
  • Place 2 inches or 5 cm apart and press thumb into center of each cookie lightly.
  • fill each cookie with 1/4 tsp jam of choice.
  • Bake each pan for 10-12 minutes, until edges are browned.
  • Chill on cooling rack and sprinkle with powdered sugar, if desired.
