Ingredients
Chicken Filling
1lb (454 g)chickenground- breasts will work too, but require chopping before assembling
1tbsppeanut oilit will give authentic Asian flavour
1/2yellow onionminced
1cupred/green pepperdiced
18oz (1 cup)can water chestnutsdrained and minced (optional, but add great crunch)
Sauce
3tbspsoysaucelow sodium
3tbsphoisin sauce
1tbspsesame oilroasted oil has a stronger flavour
1tbsprice wine vinegar
1 tbsppeanut buttercrunchy and natural works best (but use whatever you have on hand)
1tbsphoney
2tspsweet chili sauce
1/2tspgarlic powder
1/4tspground ginger
To Serve
1/4cup crushed peanuts
1/4 cup green onionsliced
Lettuce or favourite salad mix
Instructions
Whisk together sauce ingredients in bowl and set aside
Heat peanut oil in pan, once hot, add chicken and cook until done.
Add onion, cooking until onions are transparent.
Add peppers and water chestnuts and cook approx. 5 minutes.
Add sauce mixture to pan, stirring to coat thoroughly. Once bubbling, remove from heat.
Spoon into prepared lettuce leaves, or serve over a salad, coleslaw mixture or rice.

Notes
Lentils can be substituted for chicken to make this dish vegetarian. Add a bit of water to the sauce to keep it hydrated during cooking.Fresh garlic and ginger can also be used and will give dish a great fresh flavour.
