Broccoli Crunch Salad

quick and easy, and just right for hot summer nights.

Equipment

  • measuring spoons and cup
  • sharp knife
  • cutting board
  • large and small bowl

Ingredients

Salad

  • 3 cup broccoli florettes bagged is fine!
  • 1 cup cheddar cheese grated
  • 8 strips bacon crumbled (or use the bagged one is you have them)
  • 1/2 cup white onion finely chopped
  • 1/2 cup raisins fresh grapes are a wonderful substitute
  • 1/2 cup walnuts sunflowers seeds or any other nut work well too!

Dressing

  • 1 cup mayonaisse
  • 4 tbsp apple cider viengar
  • 2 tbsp sugar as desired (I don't use any)

Instructions

  • Mix salad ingredients in a large bowl.
  • Mix dressing ingredients together is small bowl.
  • Add dressing to salad. Mix well.
    Enjoy!

Notes

Sometimes I use apple in place of grape or raisin. 
Pancetta works great in place of bacon, and feta replacing cheddar is always good too.
For a bit of bite, add 1/2 tsp Dijon mustard to the dressing.
