Welcome to Week 84 of Mmm Mondays, where we turn Monday woes into Monday whoas!

This week’s header was taken last summer, in my favorite spot. It’s a shallow place in the river, tucked off the beaten path. When you finally reach your destination after scrambling through scraggly wind blown trees and short sun beaten grasses, you enter this oasis, shaded by century old trees. Only a short jaunt from home, this is where I go to recharge, and take some time to slow down. And to wear as little as necessary. This is the place that makes me say Mmm.

Thank you for your patience while I was away. I am home now, but only intermittently as we have two weddings and pre-wedding parties to attend in the next month, and the harvest of our crops and gardens have begun too. I’ll get to all your Mmm’s as soon as possible.

Neon Gods by Katee Robert
Neon Gods was given to me as a gift and I put it on a shelf and forgot about it. As a retelling of the Greek mythological tale of Hades and Persephone, I must admit, it wasn’t on the top of my TBR pile, because let’s face it, we’ve read this story in a million different ways before. But then I placed it in the wrong pile, and came with me on my trip, and wow! Call me impressed.
Still very much written in a mythical world, Neon Gods, follows Persephone as she attempts to flee the city of Olympus after her mother ensnares her in a plan for an arranged marriage. Running to the underworld, she meets Hades, and as they say, the rest is history.
Like I said, we all know this story, but Katee Roberts has given Olympus a modern twist, creates a love triangle unlike anything we are expecting, and makes each scene more erotic than the last. It’s difficult to make an entire book filled with sex scenes and still tell and engaging story, but that is exactly what Neon Gods has done.
Warning: this book is meant to be a private affair 😉
Week 84 Recipe
Zucchini Boats
Not all summer squash are zucchini’s, but all zucchinis are summer squash. Zucchini is a name originating in Italy- you can tell by the INI, at the end.
My garden is bursting with summer squash, which is what I will use to replace the zucchini in this recipe. You can use green, or golden squashes, and if you happen to have some winter squash on hand (spaghetti, acorn, etc.), they are great substitutes too.
Zucchini Boats
Equipment
- baking pan lined with parchment for easy clean up
- spoon for hollowing out zucchinis
- cheese grater
- frying pan for browning minced (ground) beef or sausage
Ingredients
- 4 zucchinis cut lengthways, ends trimmed
- olive oil
- 16 oz. ground meat Italian sausage or beef work best (IMO)
- 1 tbsp garlic minced
- 1/4 tsp onion pwder
- 2 medium tomatoes chopped
- 1/2 cup grated cheese I use mozza with sausage, and cheddar with beef
- 1/2 cup parmesaen grated
- 1/4 cup bread crumbs
- 2 tsp parsley/basil diced- with sausage I use basil to sweeten the spice, with beef I use parsley to rid the garlic aftertaste.
Instructions
- Preheat Oven to 400 F/205 C- I use the BBQ or grill in the summer
- Brown minced meat in frying pan
- Using spoon, scoop out interior flesh (pulp) of zucchinis, leaving 2.5 cm/1 inch of flesh in place. Place zucchinis on baking sheet.
- Place scooped out zucchini flesh in with meat and continue browning. Add garlic, onion salt, tomatoes and salt and pepper, and cook through.
- Fill zucchinis meat mixture, spooning out evenly.
- Top with cheese/parmesan, breadcrumbs, and parsley/basil.
- Bake for 20-22 minutes, until zucchini is cooked through and cheese is melted.
- Enjoy!
