Welcome to Week 47 of Mmm Mondays, where we turn Monday woes into Mondays whoas!

Last week had 11 scrumptious posts with a flood warning, deconstruction, and green lights. It also gave us a Red Light fascination, a white dress, and some hand me down’s. You can read all those Mmm’s and more here.

Mmm Monday’s is designed to make you say Mmm. Open from Fridays at noon until Tuesdays at 6pm, you have four days to share what makes your mouth water. Some favourite topics are sexy stories, promising photos and elegant edibles, but it’s all about you.

Week 47 Recipe

Glazed Holes

Like most North Americans, doughnuts (donuts) are a favourite in our home, but I find them to be a lot of work. This easy recipe gives you all the taste in half the time, leaving more for other lip-licking moments.

Glaze Ingredients

  • 1 1/2 (300 g) confectioner’s sugar
  • 3 1/2 tsp (18 ml) whole milk (cream is a great substitute)
  • 2 tsp (10 ml) vanilla extract

Hole ingredients

  • Oil for frying (I use a pan, but a deep fryer is a good option-ensure oil is clean to prevent taste transfer)
  • 1 cup (250 ml) milk
  • 1 egg (the bigger the better- if using small sized, use 2)
  • 2 cups (400 g) flour (all-purpose is fine. For a crumblier hole, use cake flour)
  • 2 tbsp granulated sugar (30 ml)
  • 4 1/2 tsp (22 ml) baking powder
  • 1/2 tsp (dash) salt
  • 1/4 cup (50 g) butter melted

Directions

  • Preheat Oil to 350F (180C). If using a deep fryer, this is an average temp. For those using a pan, a thermometer comes in handy, but at medium-high heat seems to work well for electric ranges, and medium for gas ranges. Warm up should take approximately 7 minutes…
  • Make glaze by mixing sugar and vanilla together and adding milk slowly but continuously until smooth. Less milk makes a heavier glaze. – Set aside
  • Whisk milk for holes and egg together in small bowl
  • In a medium bowl, add all dry ingredients, stir to combine
  • add milk and egg mixture and pour in melted butter, mixing until it forms a thick dough
  • Using an ice cream scoop (this makes perfectly round balls- if you don’t care about shape, a tablespoon and your fingers will work just as well), drop 1 tablespoon scoops into the hot oil, leaving space for even cooking
  • Fry for 1-2 minutes (until golden brown) and then flip, continuing to cook on the other side
  • remove from oil and place on towel lined tray, cool slightly
  • placing a cooling rack on a baking tray, dip holes into glaze and place on rack to dry (tray will collect any drips)
  • Serve and Enjoy.
Options:

Don’t want glazed? No problem. Toss holes in a cinnamon sugar mixture, dip into a cream cheese dip or drizzle with melted chocolate and eat with fruit and yogurt. For chocolate holes add 2 tbsp (30 ml) cocoa to hole mixture’s dry ingredients.

These holes will store for 3 days in a covered container, but may “sweat” and loose there spongy consistency.
