Chicken Parmesan (Parmigiana)

crispy breaded chicken in a tangy tomato sauce, smothered in mozza and parmesan cheese. Hello comfort food!

Equipment

  • 1 cast iron or non stick skillet able to be transferred to oven

Ingredients

Breaded Chicken

  • 2-3 chicken breast, boneless/skinless sliced in half lengthwise
  • 2 tsp salt divided
  • 2 cups panko breadcrumbs
  • 1/2 cup parmesan cheese fresh, grated
  • 1 tbsp garlic powder
  • 2 eggs beaten
  • 1/3 cup vegetable oil for frying

Sauce

  • 1 cup onion finely chopped
  • 2 tbsp garlic minced
  • 2 cups tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1/4 cup parsely fresh, chopped
  • 1/2 tsp salt

Topping

  • 5 slices mozzarella cheese higher moisture content the better
  • 1/4 cup parmesan cheese grated
  • 1 tsbp parsley fresh, chopped

Instructions

Chicken Prep

  • Preheat oven to 425F (230C)
  • Slice chicken breasts all the way in half, place on cutting board and cover with plastic wrap. Flatten each breast half until 1/2 inch (1.25 cm) thick
  • Pat each breast dry with paper towel and season with 1 tsp of divided salt. Set aside and start batter.
  • In a shallow plate. combine breadcrumbs, parmesan cheese, garlic powder and remaining salt. Set aside. Add beaten egg to separate dish.
  • Dip both sides of each breast in egg, then breadcrumb mixture to coat evenly.
  • Heat oil in skillet over medium high heat. Pan fry chicken breasts for 4-5 minutes before flipping and frying for opposite side. Set aside on plate.

Sauce

  • Remove all but 2 tbsp of hot oil from skillet. Add onion and sauté until transparent. Add garlic and sauté until fragrant.
  • Add tomato sauce, paste, Italian seasoning, parsley and salt and combine well. Bring to a simmer and let bubble for 5 minutes.
  • Remove form heat and set aside.

Assembly

  • Place breasts in pan, one at a time, spooning excess sauce over the top of each, coating thoroughly.
  • Cover each breast with a clice of mozzarella and 1 tbsp parmesan cheese. Sprinkle a touch of parsely on top.
  • Bake for 15-20 minutes, or until cheese is melted and a golden brown.
  • Serve with pasta, a salad or as a sandwich.
