Basbousa (semolina cake)

- 2 cups Semolina
- 1 cup sugar
- 1 cup Full fat Milk you can use skimmed milk if you wish
- 1/2 cup butter at room temperature
- 2 tbsp yogurt (Greek or balkins)
- 1 cup coconut flakes
- 1 tsp Vanilla
- handful of shredded Almonds
Syrup Ingredients
- 1 Cup water
- 1 Cup sugar
- 2 tbsp butter
- 1 tbsp lemon juice
- 1 tbsp flower water (rose water, not required, but leaves a nice aftertaste)
preheat the oven to 350 F
Mix all the dry ingredients together in large bowl, then add the yogurt
Mix milk and butter on stove until it reaches a boil and the butter melts. Immediately pour over dry ingredients and mix well till you have a doughy texture.
Spread the dough in a circular tray around 9" in diameter, and shape it into small rectangles and decorate with almonds.
Bake for 35-45 minutes or until the basbousa turns golden brown. Meanwhile, make the syrup.

Mix all the syrup ingredients together on the stove on high heat till it boils
Leave it to boil for 6 min on medium hit or till the syrup thickens.
Remove Basbousa from and let sit 15-30 minutes tehn pour 1/2 the syrup over the top Wait until completely cooled, then repeat prcess.
Cut in cubes and serve!
