Week 43 Recipe

Just the Tip -Dipped Banana Pops

Ingredients

  • baking tray and parchment paper
  • 4 or 5 large ripe bananas
  • Popsicle sticks (also known as treat sticks, or craft sticks. Paper cake pop sticks will work really well too!)
  • chocolate (any will do), yogurt or marshmallow fluff (or all three)
  • chopped nuts, sprinkles, dried fruits (coconut, raspberries, etc), coffee beans (roasted and ready to eat) or any other topping you desire

Directions

  • cut peeled bananas in two equal pieces
  • Place on popsicle stick, ensuring it doesn’t poke out the other end
  • place on parchment paper lined tray and freeze for minimum 15 minutes
  • while freezing, melt chocolate and place in shallow dish (hint: adding a tsp of coconut oil will prevent it from solidifying).
  • Place yogurt/marshmallow fluff is shallow dish
  • Dip each banana in desired dish
  • sprinkle on desired toppings
  • place on tray and freeze for 30 minutes minimum
  • Enjoy!

You can make these in advance. If so, freeze for 30 minutes then wrap in plastic wrap, or place in bag to prevent frost burn.
