Week 74 Recipe
Asian Chicken Lettuce Wraps
A quick, easy, healthy dinner, with just a hint of spice and a whole lot of flavour.- Gluten and Dairy Free- to make a vegetarian version, substitute lentils for chicken.
Asian Chicken Lettuce Wraps
Equipment
- non-stick pan for frying
- measuring cups
- measuring spoons
Ingredients
Chicken Filling
- 1 lb (454 g) chicken ground- breasts will work too, but require chopping before assembling
- 1 tbsp peanut oil it will give authentic Asian flavour
- 1/2 yellow onion minced
- 1 cup red/green pepper diced
- 1 8oz (1 cup) can water chestnuts drained and minced (optional, but add great crunch)
Sauce
- 3 tbsp soysauce low sodium
- 3 tbsp hoisin sauce
- 1 tbsp sesame oil roasted oil has a stronger flavour
- 1 tbsp rice wine vinegar
- 1 tbsp peanut butter crunchy and natural works best (but use whatever you have on hand)
- 1 tbsp honey
- 2 tsp sweet chili sauce
- 1/2 tsp garlic powder
- 1/4 tsp ground ginger
To Serve
- 1/4 cup crushed peanuts
- 1/4 cup green onion sliced
- Lettuce or favourite salad mix
Instructions
- Whisk together sauce ingredients in bowl and set aside
- Heat peanut oil in pan, once hot, add chicken and cook until done.
- Add onion, cooking until onions are transparent.
- Add peppers and water chestnuts and cook approx. 5 minutes.
- Add sauce mixture to pan, stirring to coat thoroughly. Once bubbling, remove from heat.
- Spoon into prepared lettuce leaves, or serve over a salad, coleslaw mixture or rice.
- Enjoy!
