Clan of the Cave Bear is not a new book. In fact it was published before I was born and I didn’t read it until many years later when recommended to me by a lover. The first of six in the Earth’s Children series, Clan of the Cave Bear is my favorite book of all time, and is a celebration of the perseverance of the human spirit and demonstrates the unimaginable ability for our species to adapt to almost any situation. Combining history and fiction, Jean M. Auel takes us on the ride of a lifetime, where family is more than just blood and even love has boundaries.

30 000 years ago, Ayla was separated from her family as a young girl following an earthquake. Rescued by a medicine woman of the Clan of the Cave Bear- a clan of Neanderthals, Ayla must learn to fit in with a people who look nothing like her, speak no words, and can’t understand her or the fluid that seems to constantly leak from her eyes.

But when the leader’s son takes a special interest in Ayla, the clan members will think she’s receiving special treatment but Ayla knows he’s only out for revenge.

Caprese Salad

I don’t know about you, but my yard is bursting with summer fresh veggies. I have tomatoes and basil in abundance, so that can mean only one thing, Caprese Salad. Serve as an appetizer or with a loaf of crusty French bread for a light meal.

Caprese Salad

The taste of summer. this simple salad is made with sliced tomato and mozzarella cheese, with fresh basil leaves sandwiched between.

Total Time7 minutes
Course: Appetizer, italian, Main Course, Salad
Cuisine: Italian

Servings: 4 servings

Equipment

  • food processor or blender

Ingredients

Salad

  • 1/4 cup fresh Basil leaves
  • 4 medium- large tomatoes sliced into desired thickness
  • 1/2 lb (225g) fresh mozzarella cheese sliced

Balsamic Vinaigrette

  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 tsp ground mustard
  • 1/4 cup basil
  • salt and pepper to taste

Instructions

  • Slice all tomatoes and cheese
  • Layer in circular pattern beginning with tomato, basil leave, cheese, basil leaves, and repeat until plate if full, or no slices remain.
  • Mix all vinaigrette ingredients together in blender, or food processor (or bullet), until well combined.
  • Drizzle over salad.
  • Serves as is or with fresh bread.
    Enjoy!

Notes

you can omit the basil in the vinaigrette if desired. I just really like fresh basil.
