Mmm Mondays is making some changes, and like most things in life, is evolving as it grows.

We’ve added a new platform to highlight – Medium; and are still working on ideas to keep this space- the Mmm Mondays blog- relevant. The best of both worlds! Or at least, two of them…

Anyway, thanks for continuing to put the Mmm in Mondays.

Mmm Mondays on Medium — What Makes you say Mmm?

Many bloggers have made the move to Medium. Since the beginning, the idea behind Mmm Mondays was to share all the great work and artists that make our mouth’s water. I still very much want to promote that and them, so, Mmm Mondays has decided to make the move too. This was our first week, and while the structure is somewhat changed, the goal remains the same. Putting the Mmm back into Monday.

This past week has seen four posts (so far).

First was Hot for Teacher, a memoir of college days and carnal desire by MrsK

Then May delighted us with Dare to come outside for some Sexy fun? A real-life erotic tale!

Marie gave us a wonderful reminder about needs vs. wants in Lip Service. Who Pays?

Book of the Month

In January, I’m reading:

The Measure by Nikki Erlick

Although it has dystopian vibe to it, this book has been wonderful. Well written and touching on numerous complex topics at once, it has been a catalyst of many conversations, and a few story ideas. I highly recommend you give it a go.


Week 108 Recipe

Fresh Vietnamese Fresh Spring Rolls

Unlike their deep-fired counterparts, these Vietnamese spring rolls are fresh. great for a hot day, or a light meal anytime.

Ingredients

  • 2 ounces rice vermicelli
  • 8 rice wrappers 8.5 inch diameter
  • 8 large cooked shrimp – peeled deveined and cut in half
  • 2 leaves lettuce chopped
  • 3 tablespoons chopped fresh mint leaves
  • 3 tablespoons chopped fresh cilantro
  • 1 ⅓ tablespoons chopped fresh Thai basil

Sauces:

  • ¼ cup water
  • 2 tablespoons fresh lime juice
  • 2 tablespoons white sugar
  • 4 teaspoons fish sauce
  • 1 clove garlic minced
  • ½ teaspoon garlic chili sauce
  • 3 tablespoons hoisin sauce
  • 1 teaspoon finely chopped peanuts

Instructions

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in vermicelli pasta and return to a boil. Cook pasta uncovered, stirring occasionally, until the pasta is tender yet firm to the bite, 3 to 5 minutes.
  • Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat; place 2 shrimp halves in a row across the center, add some vermicelli, lettuce, mint, cilantro, and basil, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with lettuce. Repeat with remaining ingredients.
  • For the sauces: Mix water, lime juice, sugar, fish sauce, garlic, and chili sauce in a small bowl until well combined. Mix hoisin sauce and peanuts in a separate small bowl.
  • Serve rolled spring rolls with fish sauce and hoisin sauce mixtures.
