Week 122 Recipe

It’s been hot! 28 Celsius yesterday, and so I wanted something sweet, but didn’t want to turn on the oven and found this wonderful recipe. The freeze time is tough for someone like me, but it was definitely worth the wait. Sweet and creamy, and perfectly delicious on a scorching hot day.

Creamy Vanilla Bean popsicles

This popsicle is full of vanilla flavor and comforting creaminess. The trick to both is the vanilla bean and full-fat creamy milk.

Ingredients

  • 1 can 14 Oz. Size Sweetened Condensed Milk
  • 1 cup Whole Milk
  • 1 cup Heavy Cream
  • 1 Vanilla Bean See Note

Instructions

  • In a large bowl, combine sweetened condensed milk, whole milk, and cream. Whisk until well-combined.
  • Slice the vanilla bean lengthwise. Using the back of a small knife, scrape out the vanilla paste (seeds) inside. Add the vanilla to the milks and whisk until well combined.
  • Using a ladle or a vessel with a spout for pouring, carefully pour the mixture into popsicle molds, being careful not to overfill. Cover and place sticks in the molds. Freeze overnight.

Notes

Note: You can substitute vanilla bean with 1 teaspoon vanilla paste or 1 tablespoon vanilla extract.
